For Microsoft Word Attachments, the mime type showing up in my Evolution install is:
application/msword
I just installed the redhat-menus update, "redhat- menus-3.7-2.2.fc3.noarch.rpm", and now at least MSWord "doc" Mimetypes are correctly opening in OpenOffice..... Havent tried the others yet.....
More as I run across it, but thanks for fixing this (still would like to know where the ".desktop" file exists that controls this....)

The files that control what mime-types OOo accepts via double-click or right-click in Nautilus and in Evolution are:
/usr/share/applications/redhat-word-processor.desktop /usr/share/applications/redhat-spreadsheet.desktop /usr/share/applications/redhat-presentations.desktop /usr/share/applications/redhat-drawing.desktop
There's going to be another redhat-menus package for FC3-updates tomorrow, and a new build of OOo tomorrow that should fix the remaining issues with OOo documents and Evolution/nautilus.

can i take a second and tangent. Is there any plans to move away from using redhat-whatever.desktop and redhat-whatever.png? I've been told on occasion that redhat-whatever.png can be problematic for people creating icon themes, and they are not exactly excited about having to create files that look vendor specific in order to provide aftermarket icon thems that work on fedora.
We were able to pull redhat out of the names associated with the config tools. Is there a plan to follow suit with the .desktop and .png files being used?

If I inspect e.g /usr/share/applications/totem.desktop totem is registered for mp3 files, but actually isn't able to handle those files appropriately. Same is true for rhythmbox.desktop. Wouldn't it be appropriate to remove those file types?
Actually, if I edit those files and remove mp3, the programs still show up in other applications ("Open with", if I right-click on an mp3-file icon).
And just a question:
If there are several programs which can handle e.g mp3 files, where can I specify, which is the default one (and is listed first in its context menue)?

In my opinion, no. Technically, these apps can play mp3 files with the appropriate plugin installed. If totem or rhythmbox aren't registered as capable of handling mp3 files, the user may end up thinking that he needs to install a whole new app just to play mp3s when he only needs to install the mp3 plugin.

If you mean system wide defaults (in other words, setting the default without using "Properties->Open With") ... I don't know.
