Hello all,
Can anyone recommended a good iptables tutorial or a GUI that I can use to configure my iptables?
My linux box is getting slammed from hackers trying to get in and I would like to start doing some preventative measures.

install shorewall if you want to just get up and running very quickly. Forget about the gui tools.

Go to documentation... You'll find more HowTo's and Tutorials and FAQ's than you're going to know what to do with.
The iptables tutorial by Oskar Andreasson comes highly recommended.

Firestarter is the simplest GUI and works well as long as you don't need to do complicated configuration. Then, there is guarddog, shorewall, and fwbuilder that are frequently mentioned, here. My personal favorite is fwbuilder - it seems to be the most configurable, at least to me - others will probably chime in.

My choice is Webmin as the simplest and most intuitive GUI. I am not a fan of either Shorewall or Firestarter but they might be worth looking into.

You'll be better off if you read a little about iptables and understand what you're doing than with any gui.
